Yummies: Easy Fish Platter starter


This is such an easy tasty fish starter and it can be combined with what the supermarket has on offer, the only thing you really need to do is make up the lime mayonaise that sets the dish up. Do not worry if you cannot get crayfish tails just use some cooked cooked King Prawns, I have found Waitrose excellent for things like that or Marks and Spencers I am afraid Tesco keep to the more basic line.

The Ingredients
  • 4-6ozs of Cooked Crayfish, some call them Crayfish Tails
  • 1 small pack of Honey Cured makeral fillets
  • 1 small pack of peppered smoked mackeral fillets
  • 2 small pieces of cooked honeyed salmon, sold in packs of two
  • 1 carton of smoked salmon pate
  • 3 tablespoons of mayonaise
  • 1 large lime
  • 1 tablesspoon of creme fraiche
  • Black pepper
  • 1 Bag of mixed green salad leaves
  • 1 large lemon
  • 1 packet of dill
The Method

Wash the salad leaves and share between 4 desert plates, take the skin of the mackeral fillets and share out the fillets in small chunks on top of the leaves keeping each type seperate, then again share out the crayfish and gently flake the salmon between the four plates, also the pate which looks good if you have a small ice cream scoop and put a ball of it on the salad. Season with black pepper

Take the zest off the lime and put into a small bowl then add the mayonaise and creme fraiche and then squeeze the lime and mix it all together put the lime mayo in the middle of your fish salad top with a wedge of lemon and sprinkle finely chopped dill over the top, this is wonderful served with warm crusty bread.
