Chicken & Tarragon With Sun Dried Tomatoes

A truly lovely recipe, the sun dried tomatoes and the tarragon mixed with the lemons makes you think of summer evenings in the med. This is a dish that can sit around for a while so that makes it very useful when entertaining.

It is good served with a wild rice and salad. this quantity serves 4-6 depending on portion size. Warm oven would be about 150 degrees.

Ingredients

  • 5-6 Chicken breasts
  • 8 tablespoons of lemon juice
  • 2 teaspoons of paprika
  • 1 clove of garlic
  • 1 tablespoon of chopped fresh tarragon
  • 2ozs of butter
  • 12-14 sun-dried tomatoes
  • 8oz of creme fraiche
  • sprinkle of chili powder

Method

  1. Slice chicken into thin strips then marinade in lemon juice, paprika, garlic and chopped tarragon for at least an hour, 2 is better.
  2. Melt butter in  a large frying pan, add chicken mixture
  3. Cook gently for 8-10 min
  4. Add thinly sliced sun-dried tomatoes to the pan cook for a few mins
  5. Lift out the chicken and let the sauce bubble
  6. Reduce a little, then add the creme fraiche
  7. Add salt and pepper to taste, then return the chicken to the sauce and place in a warm oven for 20 minutes covered or it can stay in a warm over for up to an hour as long as you keep checking it

  1. I actually discovered that you had updated this recipe to execute on an air fryer. I use a sling made from a ribbon of folded kitchen foil to introduce and remove glass dishes from the air fryer basket. Unfortunately, in this instance, the cooked dish slid out of the sling and shattered on the floor. We had bacon and egg that night.

Hi Glen, sorry this reply is late, been ill over Easter and everything fell behind, some of my recipes on here are from a while ago long before I had an air fryer, I am working at converting and adjusting recipes so they can be done in an air fryer. Awful to hear about your glass dish smashing, and the loss of your super! I had a similar accident with a foil sling luckily it did not hit the floor but I ended up with a burn, I use the silicone baskets now which have helped. Thanks for commenting.
